Happy Anniversary Week!

Since this week was our Anniversary week we decided to stretch it out as long as possible. On the actual Anniversary day we went to dinner at the Melting Pot. It was amazing, especially the chocolate fondue! We also had the top layer of our wedding cake. It tasted really good for being frozen for a year. We had decided we wanted a interesting flavor for "our cake" . So we had Almond pound cake with chocolate filling. YUMMY!! Korey and I had decided we were not going to give each other gifts because we had recently purchased at mattress for our Anniversary. But, sneaky Korey bought us a original Robert Indiana poem. This was very fitting because we based our wedding around his LOVE statue. I love it and can't wait to get it framed and hung up to. Later in the week we went to the Brazil Grill of Indy to celebrate with the family. We celebrated my parent's Anniversary, our Anniversary, and Father's Day. It was really fun and we ate a ton! Thank you for all of the well wishes. We really appreciate it :) Here is to MANY MANY more years!

Sports Legend Dinner

Last night the "Crandall Clan" attended the Sports Legend Dinner. We attended under the BEC Consultants and felt honored be there. This dinner was a benefit dinner for Lucious Newsom and The Lord's Pantry. Lucious is an amazing man, and he has donated so much of his life helping the community. His new project is to open a battered woman's shelter, and this dinner helped contribute to the cause. There were many "celebrities" (for Indianapolis that is). They included Governor Mitch Daniels, Colts players Marlin Jackson and Jim Sorgi, Former Secretary Jack Kemp, Colts President Bill Polian, Colts Coach Tony Dungy, and Congressman Mike Pence. Lucious is such an inspiring man, and we hope to volunteer our help in the very near future. Here are some pictures from the night. Sorry about the quality and no pictures of Lucious....I didn't want to be to paparazzi like.

1st Annual Girls Vacation!

Ashley, Charly, Dani, Emily, Lauren, and I decided to start an annual girls vacation. So, we headed down to sunny Bonita Springs (right outside of Naples). We stayed in my family's condo where we enjoyed the sun, beach, friends, and great conversation. We also had some great food! Charly made her famous lasagna and we all combined to make yummy beef and chicken tacos. In addition, we ate at some fantastic restaurants, Pinchers Crab Shack at Tin City and the Turtle Club right on the beach. Overall it was an amazing week, and I cannot wait until the next vacation!

My "last supper"

My amazing husband decided since I was leaving for a trip with the girls he would make my "last supper" before I leave. He made Ham and Cheese Stuffed Chicken Cutlets with Asparagus. For dessert we had strawberry shortcake. It was so good and beautifully prepared! Here are the pictures of the wonderful meal.

The recipe:
4 (6 ounce) boneless, skinless chicken breasts
3 tablespoons EVOO, plus more for drizzling
5 to 6 fresh thyme sprigs, leaves stripped and chopped
1 lemon, zested and halved
1/4 cup fresh parsley, a generous handful, chopped
4 slices prosciutto cotto or rosemary ham
4 slices Fontina cheese, about four ounces
1/2 cup dry white wine 1 pound asparagus, trimmed

Line up the chicken breast pieces on a work surface with the pointed ends closest to you. Place your hand flat across the top of each breast and use a sharp knife to cut horizontally into the meat, working your way down to the tip end; do not cut all the way through. You just want to be able to open up the breast like a book. Cover the butterflied breasts with plastic or wax paper and gently pound out to 1/4 inch with a small skillet; a couple of gentle whacks will do it.
Preheat a large skillet over medium-high heat with 3 tablespoons of EVOO, 3 times around the pan.
Combine the chopped thyme with a couple of teaspoons of lemon zest and the parsley. Sprinkle the inside of each chicken breast with the thyme-lemon zest-parsley mixture. Add a folded slice of prosciutto cotto or rosemary ham and Fontina cheese to each, then fold up the breasts again. Season the stuffed chicken on both sides with salt and pepper.
Add the seasoned stuffed chicken to the hot skillet and brown for 5 minutes. Carefully flip the chicken over, add the wine, and cook for 3 to 4 minutes more.
While chicken cooks, bring 1 inch of water to a boil in a skillet. Salt the water and cook asparagus for 3 to 4 minutes, until just tender. Drain and dress with the juice of 1/2 lemon and a drizzle of EVOO.
Arrange a few spears of asparagus on each dinner plate and top with a stuffed chicken breast. Spoon some of the pan juices over each serving.

The Lake

This weekend we headed up to Lake Wawasee for some fun in the sun! We did some boating, road the wave runner, margaritas, relaxing, and yummy food. We can't wait for more weekends to come :)

Lauren's farewell party and my new do'

Lauren's had a farewell party this weekend to go out in style. She will be moving to Bloomington for law school. She will be deeply missed, but I am sure I will be seeing her often! We had a great evening, and I know it was a night to put in the books :)
PS: I also got my hair cut. I thought I needed a summer cut. I love it!
